Cook and stir roux for two minutes but don’t brown it. In a separate saucepan, warm two tablespoons oil over medium-low heat. Cook and stir six to eight minutes or until softened. Add onion and cook for two minutes, stirring. Heat two tablespoons of the oil in a large skillet over medium-high heat. I should have probably called this Penne and Cheese because the store didn't have any gluten-free macaroni, but that doesn't roll of the tongue as easily, does it?
